This month, a spring classic takes centre stage at aigu: white asparagus.Served with sauce hollandaise or brown butter and delicious parsley potatoes, it is presented exactly the way you want to enjoy it at this time of year. 

For those who would like to make it even more indulgent, it can be complemented with cured ham, cooked ham or a 200 g veal steak. An uncomplicated seasonal dish with style – and a very good reason to reserve a table at aigu this May.
